Washing: hand wash in warm soapy water and dry straight away. Like all quality kitchen knives, these are not dishwasher knives — a quick towel dry keeps the blade and handle in top form.
Storage: keep them in the box, on a magnetic strip or in a block — loose in a drawer dulls the edge and isn't safe.
Keeping the edge: a few passes on a diamond + ceramic sharpener brings the edge back in minutes. Many cooks add ours to keep every blade razor-true.
